When you don't want to spend a lot of time cooking - or dirty a lot of dishes - what could be easier than grilling? Before the camping trip, clean your desired amount of boneless chicken (breasts, thighs, etc.) and place in a Ziploc bag. Pour your favorite barbecue sauce on top and work in with your fingers so all pieces are coated. Now, your chicken is either ready for the freezer, refrigerator, or the cooler, depending on how much time is left until your trip. Grill your thawed chicken on a grate over a bed of medium-hot coals, turning once or twice until done. Suggestion: serve with a lettuce & vegetable salad that's already prepared in a Ziploc bag (just add your dressing and shake!) and a baked potato. (Potatoes can be baked ahead of time at home or bury them, while they're wrapped in heavy duty foil, in the hot coals for about 1 1/2 hours). Return to Troop 358 Camping Recipes
