Yellow Jackets
(submitted by Mr. Yackel and the Troop 358 historic cookbook!)

Yellow jackets is a one pot breakfast. Use:

Bacon (3 slices per scout)
Potatoes (1 per scout)
Eggs (2 per scout)
Onion (1 large per patrol)

1. Fry bacon until crisp, remove from pan and drain bacon strips on paper towels.
2. Use some of the bacon grease to fry the potatoes and onion in; both should be finely diced (prepare at home). The potatoes are easier to fry if partially cooked by boiling. Also, you can use diced potatoes from the freezer case.
3. After potatoes are fried, break eggs into potatoes and stir. Cook and stir until eggs are done.
4. Sprinkle crumbled bacon on top of the potatoes and eggs.
5. Salt and pepper to taste.

SUGGESTION: Other vegetables such as green peppers and mushrooms can improve this meal. If these optional vegetables are used, add when potatoes are almost done. You can also sprinkle grated cheese on top.
